I made strawberry cake yesterday, courtesy of the lovely pioneer woman. I made a sponge cake from scratch and used mashed sweetened strawberries along with a thick cream cheese frosting to top it off. The sponge cake actually turned out nice and sturdy. I’ll definitely use this cake for more uses. The strawberries were also very sweet and delicious. The frosting, on the other hand, was way too thick for me. Next time, I’ll use less powdered sugar and incorporate some heavy cream for fluff. Overall, it was still really good, in small doses.
That bottle on the top left corner is my homemade vanilla I made last October. It’s best with vodka, but the only thing I had on hand was gin. The taste has more of a kick than I want, but the extract is still good. Try it! Just seep vodka (or gin if that’s the only thing you have) with some vanilla beans and a few weeks later, voila!
I really need to invest in a cake dome! I’ve been lookin on etsy but I really want to see it in person before buying. Plus, there is absolutely NO space in my tiny apartment. So in the meantime, I’ll be using my big plates.
